Seems like even if we had loads of energy, cooling an entire tower to condense what little water there is in a desert environment would be a waste. Desalination plants would be immensely more efficient.

Interesting concept. Reminds me of the 'WindTraps' of the Dune books, or the 'moisture evaporators' of StarWars.

If you assume that power supply is plentiful but water is not, you could envision building say a 500m tower with an open structure shaped perhaps like two cones one inverted. If you then massively refridgerated the structure, two things should happen, firstly the dew point of the air should drop allowing what water there was in the previously hot air to condense and be guided done to the ground and into an underground resevoir, secondly the cold air should sink drawing in more air from further up, where ther should be more water. maybe.
